Ok, here is the recipe for the most delicious moist one bowl Custard Cake.
125g butter softened
200g SR flour
50g custard powder
160ml buttermilk (can use milk or water)
Preheat oven to 180*c.
Grease and line a 20cm round cake tin.
Add all ingredients to an electric mixer, food processor and beat until combined, scraping down side and repeating if needed.
(Thermomix-4 seconds sp 4, scrape down sides and repeat once or twice until completely mixed)
Spread mixture into tin and bake 45-55 minutes until a skewer comes out clean and the edges have begun to shrink from the tin slightly. Leave in tin 5 minutes before turning onto a wire rack to cool.
To freeze I cut into slices when cool and wrap individually then seal in a zip lock bag.
