CHEESE AND VEGGIE MUFFINS
These are a great veggie smuggling option!…and freezeable 🙂
makes 16 medium muffins
2cups SR flour
1 cup grated cheese
100g grated zucchini
100g grated carrot
4 rashers bacon, finely chopped
200g creamed corn
Mix cheese, veggies, bacon, egg creamed corn.
Add buttermilk and flour and stir until just combined.
Spoon into prepared muffin tins
Bake at 180*c for 25 minutes, cool on a wire rack.
